Preparation

  • Clean the leeks thoroughly and slice them thinly, then set aside.
  • In a large pot, heat the olive oil over medium heat. Add the onions and cook until translucent (about 5 minutes).
  • Stir in the garlic and leeks, allowing them to soften and become fragrant.
  • Dice the potatoes into small cubes and add them to the pot. Stir for a couple of minutes to let the flavors meld.

Cooking

  • Add the vegetable or chicken broth and bring the soup to a gentle boil. Let it simmer for about 20 minutes or until the potatoes are tender.
  • Once the potatoes are soft, use an immersion blender to puree the soup until smooth and creamy.
  • Stir in the heavy cream (if using), then season with salt and pepper to taste. Add more broth if the soup feels too thick.

Serving

  • Ladle the soup into bowls and garnish with fresh herbs if desired. Enjoy warm, perhaps with crusty bread on the side.

Notes

For variations, consider adding thyme for herbal infusions or a pinch of cayenne pepper for a spicy kick. For a vegan version, substitute heavy cream with coconut milk.
