  • 1 pound Italian sausage Feel free to substitute for chicken or turkey sausage.
  • 4 medium potatoes Russet or Yukon Gold are best.
  • 2 cups fresh green beans Trimmed and cut into bite-sized pieces.
  • 1 onion Sliced; can use yellow, white, or red.
  • 4 cloves garlic Minced; fresh garlic elevates flavor.
  • 2 tablespoons olive oil For sautéing.
  • to taste salt and pepper Adjust according to preference.
  • 1 teaspoon dried thyme Compliments the sausage beautifully.
  • 1 juice of 1 lemon Brightens flavors.

Instructions
 

Preparation

  • Gather all your ingredients. Wash the green beans, trim the ends, peel and chop the potatoes, and slice the onion. Mince the garlic.

Cooking

  • In a large skillet, heat olive oil over medium heat. Cook the sausage for 5-7 minutes until browned, breaking it up as it cooks.
  • Add sliced onions and minced garlic to the skillet. Cook for another 3-4 minutes until the onions soften.
  • Incorporate the chopped potatoes, seasoning with salt, pepper, and thyme. Cover the skillet and let cook for about 8-10 minutes.
  • Fold in the green beans, cover, and cook for an additional 5 minutes until tender.
  • Squeeze lemon juice over the dish before serving.

Serving

  • Serve warm straight from the skillet to the table.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. You can also freeze this dish for up to 3 months.
