  • 1 cup shredded cheddar cheese or a dairy-free cheese for a lactose-free variation.
  • 1/4 cup milk helps make the eggs tender and creamy.
  • 1 small onion finely chopped and sautéed with the sausage for sweetness.
  • 1/2 red bell pepper diced adds color and a mild crunch.
  • 1 tablespoon olive oil for sautéing.
  • Salt and freshly ground black pepper to taste.

Preparation

  • Heat olive oil in a skillet over medium heat. Add the crumbled sausage, chopped onion, and bell pepper. Cook until the sausage is golden and the veggies are softened.
  • In a bowl, whisk eggs with milk, salt, and pepper until just combined.
  • Pour the eggs into the skillet with the sausage and veggies. Stir gently until the eggs are softly set but still moist, then remove from heat.
  • Heat tortillas in a dry skillet for 15–20 seconds per side or wrap in a damp towel and microwave for 20–30 seconds.
  • Spoon an even layer of the egg and sausage mixture onto each tortilla. Sprinkle with shredded cheese and any fresh spinach or herbs you like.
  • Fold in the sides and roll tightly from one end to the other.
  • Cut each roll into halves or thirds for sharing and serve immediately with salsa, sliced fruit, or coffee.

Notes

For a heartier version, place roll-ups seam-side down in a baking dish, top with extra cheese and bake at 350°F for 10 minutes until bubbly. Other variations include using avocado and black beans for a vegetarian option, or making them spicy by adding chopped jalapeños.
