  • 2 cups ricotta cheese Substitute with cottage cheese for a lighter option.
  • 1 piece egg Helps bind the filling together; use flaxseed meal for a vegan option.

Sauce and Toppings

  • 2 cups marinara sauce Homemade or store-bought; fresh tomatoes can elevate the flavor.
  • 1.5 cups shredded mozzarella cheese Use freshly grated for optimal meltiness; a dairy-free option can be swapped.
  • to taste salt and pepper Just a pinch to season.

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Cook the lasagna noodles according to the package instructions until al dente. Drain and set aside.
  • In a large skillet over medium heat, brown the sausage until cooked through, around 5–7 minutes. Drain excess fat.

Filling

  • Stir in the fresh spinach until wilted, about 2–3 minutes.
  • In a separate bowl, combine ricotta cheese, egg, salt, and pepper until well mixed.

Assembly and Cooking

  • Spread a thin layer of marinara sauce in a baking dish. Take a noodle, fill it with 2 tablespoons of ricotta mixture and sausage-spinach mixture, and roll tightly. Place seam side down in the dish.
  • Repeat until all noodles are filled. Pour remaining marinara sauce over the rolls and top with mozzarella cheese.
  • Bake for 25 minutes, until cheese is bubbly and golden.

Notes

For a healthier option, use zucchini lasagna noodles. Replace sausage with ground turkey or lentils for a vegetarian version. Experiment with cheeses for richness. Allow rolls to rest for 10 minutes before serving.
