  • 1 lb sausage (Italian or your favorite variety) For rich, savory flavor.
  • 4 medium potatoes (Russet or Yukon Gold) Provides a wonderfully crispy texture.
  • 1 each bell pepper (any color) Adds sweetness and a pop of color.
  • 1 medium onion Brings depth and a touch of sweetness.
  • 2 cloves garlic For that aromatic depth—fresh garlic is always best!
  • 2 tbsp olive oil A healthy fat for sautéing.
  • Salt and pepper To taste.
  • Fresh herbs (such as parsley or thyme) Optional, for a fragrant finish.

Preparation

  • Begin by washing and cutting the potatoes into bite-sized pieces. Chop the bell pepper and onion, and mince the garlic.

Cooking

  • In a large skillet, heat the olive oil over medium-high heat. Once hot, add the sausage.
  • Cook the sausage for about 5-7 minutes, breaking it apart with a spatula until it’s nicely browned.
  • Toss in the onions and bell pepper. Cook for an additional 3-4 minutes until softened and fragrant.
  • Add the potatoes along with salt and pepper. Stir everything together. Cover the skillet and reduce the heat to medium, allowing the potatoes to cook for about 15 minutes.
  • In the last few minutes of cooking, add in the minced garlic and any fresh herbs you are using.
  • Once the potatoes are tender and golden brown, remove from heat and serve right from the skillet.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Can be frozen for longer storage. To enhance flavor, add a splash of chicken broth while cooking.
