Preparation

  • Preheat your oven to 375°F (190°C).
  • Pat the pork chops dry with paper towels.
  • In a bowl, whisk together brown sugar, soy sauce, minced garlic, mustard, and black pepper until well combined.

Cooking

  • In an oven-safe skillet, heat olive oil over medium-high heat. Sear the pork chops for about 2-3 minutes on each side until they have a beautiful golden brown crust.
  • Carefully drizzle the brown sugar mixture over the chops, ensuring they’re well coated.
  • Transfer the skillet to the oven and bake for 20-25 minutes or until the internal temperature reaches 145°F (63°C).
  • Once out of the oven, let the chops rest for about 5 minutes before serving.

Notes

Feel free to add fresh herbs like rosemary or thyme to the sauce, or a pinch of red pepper flakes for some heat. For a lighter option, consider using coconut sugar or tamari instead of soy sauce to keep it gluten-free.
