  • 1 tablespoon olive oil For heating the aromatics.
  • 1 medium onion, diced Or shallots for a sweeter touch.
  • 2-3 cloves garlic, minced
  • 1 piece bell pepper, chopped Any color.
  • 2 stalks celery, chopped
  • 2 cups okra, sliced Fresh or frozen.
  • 1 medium zucchini, diced
  • 1 cup corn Fresh, frozen, or canned.
  • 1 can (14.5 oz) diced tomatoes with juice
  • 4 cups vegetable broth Or chicken broth if not vegetarian.
  • 2 tablespoons Cajun seasoning Or to taste.
  • to taste Salt and pepper
  • to garnish Fresh parsley
  • 1 squeeze lemon juice Optional for a zesty kick.

Instructions
 

Preparation

  • In a large pot, heat the olive oil over medium heat until shimmering.
  • Add the diced onion, bell pepper, and celery. Sauté for about 5 minutes until they’re soft and fragrant.
  • Stir in the minced garlic and let it cook for another 30 seconds until it becomes fragrant.
  • Toss in the okra, zucchini, and corn. Stir to combine everything.
  • Pour in the diced tomatoes along with their juice and the vegetable broth. Stir gently to mix.
  • Sprinkle in the Cajun seasoning, salt, and pepper to taste. Bring the gumbo to a gentle boil.
  • Reduce the heat to low and let it simmer for about 20-25 minutes.
  • Ladle the gumbo into bowls and top with fresh parsley and a squeeze of lemon if desired.

Notes

Feeling adventurous? Add cooked sausage or beans for a heartier meal. For a spicy kick, add hot sauce or diced jalapeños. Fresh herbs can elevate the flavor further.
