  • 2 tablespoons Olive oil Use high-quality extra virgin for best results.
  • 1 Bell pepper, cut into chunks Use any color for variety.
  • 1 Red onion, cut into chunks Adds sweetness and crunch.
  • to taste Salt and pepper Essential for flavor.

Instructions
 

Preparation

  • Cut the chicken into bite-sized cubes.
  • In a mixing bowl, combine the chicken, ranch dressing, minced garlic, and a pinch of salt and pepper. Let it sit for about 10 minutes.

Assembly

  • On skewers, alternate pieces of chicken with bell pepper and onion chunks.

Cooking

  • Preheat your grill or grill pan to medium-high heat.
  • Place the skewers on the grill, cooking for about 10-12 minutes, turning occasionally until the chicken is golden brown and cooked through.
  • In the last minute, sprinkle grated Parmesan cheese over the skewers. Allow it to melt.

Serving

  • Remove from heat and let them rest for a few minutes before serving.

Notes

For a lighter option, substitute Greek yogurt for the ranch dressing. You can also add veggies like zucchini or cherry tomatoes.
