Preparation

  • In a large skillet over medium heat, add a splash of oil. Once hot, throw in the chopped onion and minced garlic. Sauté until the onion is translucent, about 3–4 minutes.
  • Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink, about 5–7 minutes. Season lightly with salt and pepper.
  • Stir in the diced bell peppers and continue cooking for another 3 minutes, allowing them to soften and meld their flavors with the beef.
  • Rinse the rice under cool water until the water runs clear. Toss the rice into the skillet and stir in the beef broth. Bring it to a gentle boil.
  • Once boiling, reduce the heat to low, cover the skillet, and let it simmer for about 15 minutes, or until the rice is tender and has absorbed the broth. Stir occasionally.
  • Once everything is cooked through and fluffy, splash a little soy sauce over the top to taste and give it a good stir.
  • Scoop generous portions into bowls and garnish with chopped green onions. Serve hot.

Notes

If you have leftovers, this dish stores beautifully in the refrigerator for up to 3 days. For longer storage, you can freeze individual portions for up to 3 months. Cook the rice separately for an even fluffier texture.
