Preparation

  • Slice the beef into thin strips against the grain to ensure tenderness. Slice the onions and mushrooms; mince the garlic. Prepare all ingredients to make cooking seamless.

Cooking

  • In a large skillet, heat olive oil or butter over medium-high heat. Add the beef strips in batches; do not overcrowd. Sear until browned (approximately 2-3 minutes), then remove and set aside.
  • In the same skillet, add a bit more oil if needed. Sauté onions until translucent (about 3-4 minutes). Add garlic and mushrooms, cooking until tender (around 5 minutes).
  • Pour in beef broth and Worcestershire sauce, scraping any browned bits from the skillet. Bring to a gentle simmer for about 5 minutes to reduce the sauce slightly.
  • Add the seared beef back into the skillet and cook for an additional 2-3 minutes until heated through.
  • Remove the skillet from heat and stir in sour cream until fully combined. Season with salt and pepper to taste.
  • Serve over wide egg noodles, rice, or mashed potatoes.

Notes
