Ingredients

For the pulled chicken

  • 2 pounds boneless, skinless chicken breasts Can be substituted with thighs for added richness.
  • 1 cup chicken broth Low-sodium versions work well if you’re watching salt.
  • 1 tablespoon olive oil For sautéeing and enhancing flavors.
  • 1 tablespoon smoked paprika Adds a smoky depth; regular paprika is a fine substitute.
  • 1 teaspoon garlic powder For that beloved garlicky goodness.
  • to taste salt and pepper Essential seasonings to enhance all the flavors.

For assembling the sliders

  • slider buns Opt for whole wheat or gluten-free options.
  • 2 ripe avocados Creamy and luscious, perfect for topping your sliders.
  • to taste fresh cilantro (optional) For a fresh pop of color and flavor.

Instructions

Cooking the Chicken

  • In a slow cooker, place your chicken breasts in the bottom. Pour the chicken broth over them, sprinkle with smoked paprika, garlic powder, salt, and pepper.
  • If using the stovetop, heat olive oil in a large pot, then add chicken and broth along with seasonings.

Slow Cooking or Simmering

  • Cover and cook on low for 4-6 hours in the slow cooker, or bring to a boil, then reduce the heat to low and simmer on the stovetop for about 15 minutes. The chicken should easily shred with a fork.

Shredding the Chicken

  • Once cooked, carefully remove the chicken and shred it using two forks. Return the shredded chicken to the cooking liquid, stir to soak in all that flavor.

Preparing the Avocados

  • While the chicken is cooking, slice the avocados in half, remove the pit, and scoop out the flesh. Mash with a fork until creamy, adding lime juice, salt, and cilantro if desired.

Assembling the Sliders

  • Slice slider buns in half and layer with a generous portion of pulled chicken, topped with a scoop of the creamy avocado mixture.

Serving

  • Share your sliders with friends and family, sprinkling extra cilantro on top for a beautiful presentation.

Notes

Add diced jalapeños or your favorite hot sauce for extra spice. Try pita pockets or lettuce wraps for a healthier twist. You can also add a layer of spinach or arugula for a fresh crunch.
