  • 3 cups cooked chicken (shredded) Use rotisserie chicken for a quick meal.
  • 2 cups cooked rice Any variety works—white, brown, or cauliflower rice.
  • 1 can cream of chicken soup (10.5 oz) This adds creaminess; you can substitute with homemade cream sauce.
  • 1 cup sour cream Greek yogurt is a great alternative.
  • 1 cup shredded cheddar cheese Feel free to mix with Monterey Jack or pepper jack.
  • 1 cup frozen mixed vegetables You can use fresh vegetables, too!
  • 1 tablespoon seasoning blend Like herbs de Provence or Italian seasoning.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the shredded chicken, cooked rice, cream of chicken soup, sour cream, shredded cheese, and frozen vegetables. Stir until well coated and uniformly mixed.

Baking

  • Pour the mixture into a greased 9x13 baking dish. Spread it out evenly and smooth the top.
  • Bake in the preheated oven for about 30 minutes, until heated through and the cheese is melted and bubbly.

Notes

Rest the casserole for about 10 minutes after baking to allow flavors to meld. For a cheesier treat, layer extra cheese on top during the last few minutes of baking.
