  • 1 can cream of chicken soup Creates creaminess and flavor.
  • 1 cup sour cream For a lighter version, substitute with Greek yogurt.
  • 1 cup frozen mixed vegetables Any veggies you love can be used!
  • Salt and pepper Essential to bring out all the flavors.
  • optional cheese (shredded cheddar or mozzarella) Sprinkle on top before baking for an extra cheesy twist.

Preparation

  • In a large mixing bowl, combine the cooked chicken, rice, chicken broth, cream of chicken soup, sour cream, mixed vegetables, salt, and pepper. Stir until everything is well combined.
  • Pour the mixture into a greased 9x13-inch baking dish, spreading it evenly.

Baking

  • Cover the dish with aluminum foil and bake at 350°F (175°C) for 25 minutes.
  • Remove the foil and bake for an additional 5–10 minutes, until the top is golden and bubbling.

Notes

Feel free to spice it up with jalapeños or cayenne pepper, or make it vegetarian with chickpeas or beans. Store leftovers in an airtight container for 3-4 days; can freeze for 2-3 months.
