Preparation and Baking

  • Preheat your oven to 400°F (200°C).
  • In a large mixing bowl, combine the ground meat, breadcrumbs, egg, minced garlic, soy sauce, and ground ginger. Mix gently until just combined.
  • Shape the mixture into meatballs, about 1-inch in diameter, and place them on a lined baking sheet.
  • Bake the meatballs for 15-20 minutes until browned and cooked through.

Preparing the Glaze

  • In a small saucepan, combine the pineapple juice, ketchup, and brown sugar. Heat over medium, stirring occasionally until the sugar dissolves and the mixture slightly thickens.

Coating and Final Bake

  • Remove the meatballs from the oven and toss them in the glaze until coated.
  • Return the meatballs to the oven and bake for an extra 5 minutes.

Notes

For added flavor, rest the meatball mixture for 10 minutes before shaping. Brush some glaze on before serving for a glossy finish.
