Preparation

  • Rinse one cup of long-grain white rice in a fine-mesh strainer until the water runs clear to remove excess starch.
  • In a medium saucepan, combine the rinsed rice with two cups of water and a pinch of salt. Bring it to a boil over medium-high heat.
  • Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes, or until the water is absorbed and the rice is tender.
  • Remove the rice from heat and let it sit for 5 minutes before fluffing it with a fork.
  • Drizzle in two tablespoons of olive oil and the juice of one lime.
  • Stir in chopped cilantro, tasting and adjusting seasoning as needed.
