  • 2 pieces eggs Binding agents; consider flax eggs for vegan option.
  • 2 cloves garlic, minced Fresh garlic adds depth.
  • 1 teaspoon dried oregano Herbs de Provence can be an alternative.
  • to taste salt and pepper Always to taste!
  • as needed tablespoons olive oil A drizzle for crispiness.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) to ensure a crispy texture on the chicken.
  • In one bowl, whisk together the eggs. In another bowl, combine Parmesan cheese, breadcrumbs, minced garlic, oregano, salt, and pepper.

Cooking

  • Dredge each chicken breast in the egg mixture, allowing excess to drip off, then coat generously with the breadcrumb mixture.
  • Line a baking sheet with parchment paper or lightly greased foil and lay the breaded chicken breasts on the sheet with space in between.
  • Drizzle a little olive oil over the top of each breast.
  • Bake for 20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and has a golden crust.
  • Allow the chicken to rest for 5 minutes before serving to let juices redistribute.

Notes

Leftovers can be stored in an airtight container for up to 3 days. Reheat in the oven at 350°F (175°C) for about 15 minutes to keep the crispy texture.
