  • 8 oz Pasta (any shape you love) The base of our dish.
  • 2 tbsp Olive oil For sautéing.
  • 1 medium Onion, diced Adds natural sweetness.
  • 2 cloves Garlic, minced Essential for flavor.
  • 1 cup Bell peppers, diced For color and sweetness.
  • 15 oz Crushed tomatoes Key ingredient for pizza flavor.
  • 1 tbsp Italian seasoning Blends and enhances flavors.
  • 1 cup Mozzarella cheese, shredded Melty cheese goodness.
  • 1/4 cup Parmesan cheese, grated For topping.
  • 1 cup Optional protein (cooked chicken, sausage, or chickpeas) To add heartiness.

Instructions
 

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add diced onions and bell peppers, and sauté for about 5 minutes until tender.
  • Stir in minced garlic and sauté for an additional minute.
  • Pour in the crushed tomatoes and add Italian seasoning, stirring thoroughly.
  • Add the pasta and enough water to cover everything. Bring to a boil.
  • Once boiling, reduce heat and cover. Let it simmer for about 10-12 minutes, or until the pasta is al dente, stirring occasionally.
  • Remove from heat and stir in mozzarella cheese until melted.
  • Serve hot, topped with freshly grated Parmesan cheese.

Notes

For added spice, include red pepper flakes or jalapeños. For healthier options, use whole grain pasta or load with vegetables. Store leftovers in an airtight container for up to 3 days.
