  • 1 cup Orzo Pasta This rice-shaped pasta cooks quickly.

  • 4 cloves Garlic, minced The star of the show.
  • 3 cups Chicken Broth Preferably low-sodium.
  • 1 lemon Lemon Juice From 1 lemon.
  • ¼ cup Parsley, chopped For freshness and color.

Preparation

  • In a large pot over medium heat, melt 2 tablespoons of butter.
  • Add the shrimp, season with salt and pepper, and cook for about 2-3 minutes until they are pink and opaque.
  • Remove them from the pot and set aside.
  • In the same pot, add the remaining butter and let it melt.
  • Toss in the minced garlic and sauté for 30 seconds until fragrant.
  • Stir in the orzo, then pour in the chicken broth.
  • Bring the mixture to a gentle boil.
  • Reduce the heat to low and cover the pot.
  • Let it simmer for about 10 minutes or until the orzo is tender and has absorbed most of the liquid.
  • Return the shrimp to the pot, squeeze in the lemon juice, and mix everything together.
  • Finish with fresh parsley, stirring gently to combine.
  • Dish it out and enjoy!

Notes

Add veggies like peas or spinach during the last few minutes of cooking for extra nutrition. For a spicy twist, add crushed red pepper flakes. Stir in a splash of heavy cream for a richer texture.
