  • 12 oz Pasta (penne or fettuccine) Feel free to use gluten-free pasta.
  • 6 cloves Garlic, minced The heart of this dish.
  • 4 cups Chicken or Vegetable Broth Use homemade broth for extra flavor.
  • 1 cup Heavy Cream Substitute with half-and-half for a lighter option.
  • 1 cup Parmesan Cheese, grated Vegan parmesan is a great alternative.
  • ¼ cup Fresh Parsley, chopped Basil can also be used.
  • Salt and Pepper, to taste Staples to enhance flavor.

Preparation

  • In a large pot, heat a drizzle of olive oil over medium heat.
  • Add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to let it brown.

Cooking

  • Toss in the pasta and pour the chicken or vegetable broth over it.
  • Bring the mixture to a boil. Once boiling, reduce the heat to a simmer. Cover and let it cook for about 10-12 minutes until al dente.
  • Reduce the heat to low and stir in the heavy cream, creating a creamy sauce.
  • Fold in the grated parmesan cheese, letting it melt and season with salt and pepper as needed.
  • Stir in the chopped parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For freezing, portion into freezer-safe containers and enjoy within 3 months. Add a splash of broth or cream when reheating to restore creaminess.
