Cooking

  • In a large pot, bring salted water to a boil. Add your pasta of choice and cook according to package instructions until al dente. Drain, but reserve a cup of the pasta water.
  • In the same pot, melt the unsalted butter over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.
  • Reduce the heat to low and pour in the heavy cream, stirring gently. Let it simmer for a couple of minutes until it thickens slightly.
  • Add fresh spinach to the creamy mixture, stirring until wilted and vibrant green, about 2-3 minutes.
  • Add the drained pasta back into the pot, tossing to coat. If the mixture is too thick, add a splash of reserved pasta water until you reach your desired creaminess.
  • Stir in grated Parmesan cheese, seasoning with salt and pepper to taste.

Notes

Serve with a crisp green salad and warm crusty baguette. Store leftovers in an airtight container in the fridge for up to 3 days.
