  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes With green chilies for a kick!
  • 2 cups beef or vegetable broth Homemade broth can enhance the flavors
  • 1 cup elbow macaroni Whole grain version works beautifully
  • 2 tablespoons chili powder Add more for extra heat!
  • 1 teaspoon cumin To deepen the earthy flavors
  • 1 cup shredded cheddar cheese Or a mix of cheeses for an indulgent twist
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish Optional but oh-so-pretty!

Instructions
 

Preparation

  • In a large pot over medium-high heat, brown the ground beef or turkey. Stir frequently until cooked through, about 5-7 minutes. Drain excess fat if necessary.
  • Add the diced onion and minced garlic to the pot. Cook until the onion is translucent and fragrant, around 3 minutes.
  • Stir in the kidney beans and diced tomatoes (with their juices). Let the mixture simmer for another 2 minutes to meld flavors.
  • Pour in the broth, chili powder, cumin, salt, and pepper. Stir well, allowing the spices to coat the ingredients evenly.
  • Raise the heat to bring the mixture to a boil.
  • Once boiling, add the elbow macaroni. Reduce the heat to low, cover, and let it cook for 10-12 minutes or until the pasta is tender, stirring occasionally to prevent sticking.
  • Remove from heat and mix in the shredded cheddar cheese until melted and creamy.
  • Dish up your One-Pot Chili Mac, garnished with fresh cilantro or parsley.

Notes

Feel free to make this recipe your own! Add bell peppers, zucchini, or spinach for extra nutrition; jalapeños or hot sauce for spice; different cheeses for variations. Serve with crusty bread or a simple side salad.
