Main Ingredients

  • 1 pound ground beef or turkey For a leaner option, turkey works beautifully without compromising flavor.
  • 1 onion diced onion Fresh onion adds a savory depth; scallions can be used for a milder taste.
  • 2 cloves garlic Fresh garlic enhances the aroma; use garlic powder in a pinch.
  • 1 packet taco seasoning Opt for homemade seasoning to control spice levels.
  • 1 can (15 oz) diced tomatoes, undrained Adds moisture; feel free to swap fresh tomatoes for a seasonal touch.
  • 2 cups chicken broth Vegetable broth is a great alternative for a vegetarian take.
  • 8 ounces pasta Macaroni or rotini works best; whole wheat pasta can offer a healthier option.
  • 1 cup shredded cheese (cheddar or Mexican blend) Cheese is the soul of this dish; adapt with spicy pepper jack for an indulgent treat.
  • Sour cream or Greek yogurt For a tangy finish; use either based on your preference.
  • Fresh cilantro for garnish Adds freshness; swap with green onions for a different flavor.

Cooking Instructions

  • In a large pot over medium heat, add the ground beef (or turkey). Cook until browned, breaking it apart with a wooden spoon.
  • Stir in the diced onion and minced garlic. Cook for 3-4 minutes until the onion is translucent.
  • Sprinkle in the taco seasoning and stir to coat the meat evenly.
  • Pour in the diced tomatoes (with juices) and chicken broth. Bring to a boil and then lower to a simmer.
  • Stir in the pasta and let it cook uncovered for about 10-12 minutes, or until the pasta is al dente.
  • Once the pasta is cooked through, remove the pot from heat and stir in the shredded cheese until melted and creamy.
  • Top with a dollop of sour cream and a sprinkle of fresh cilantro before serving.

Notes

Feel free to add black beans or corn for extra flavor. Incorporate jalapeƱos for spice, and use whole grain pasta and lighter cheese for a healthier version.
