Protein

  • 1 lb smoked sausage (chicken or turkey recommended) Use a lean option.

Liquid Ingredients

  • 1 can (14.5 oz) diced tomatoes Fire-roasted adds extra flavor.
  • 2 cups chicken broth Vegetable broth can be used for a vegetarian version.
  • 1 cup heavy cream Coconut milk can be substituted for a dairy-free option.

Seasoning

  • 1 tbsp Cajun seasoning Homemade or store-bought.
  • Salt and pepper to taste

Garnish

  • to taste fresh parsley, chopped For garnishing.

Instructions
 

Preparation

  • In a large pot or Dutch oven, heat olive oil over medium heat.
  • Add diced onions and bell peppers, cooking until they soften and slightly caramelize (about 5 minutes).

Incorporating Ingredients

  • Stir in the minced garlic and sliced sausage, cooking for another 3-4 minutes.
  • Pour in the uncooked pasta, diced tomatoes (with juices), chicken broth, and Cajun seasoning. Stir to ensure the pasta is submerged in the broth.

Simmering

  • Bring the mixture to a gentle boil, then reduce the heat to low. Cover and let it simmer for about 12-15 minutes, or until the pasta is al dente.
  • Stir occasionally to prevent sticking.

Finishing Touches

  • Once the pasta is cooked, stir in the heavy cream and season with salt and pepper to taste.
  • Allow it to cook for another 2-3 minutes until creamy.
  • Garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container for up to three days. Reheat with a splash of broth or water to restore creamy texture.
