  • 4 pieces boneless, skinless chicken breasts (or thighs for a richer flavor)

  • 1 cup long-grain rice (aromatic jasmine adds a lovely touch)
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter for that essential richness
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Shredded cheese (Gruyère or Swiss is perfect) for that indulgent topping
  • Fresh parsley, chopped for garnishing

Preparation

  • In a large, deep skillet, heat the olive oil and butter over medium heat. Add the sliced onions. Cook, stirring frequently until they become golden brown, about 8-10 minutes.
  • While the onions cook, season your chicken breasts generously with salt, pepper, thyme, and garlic powder.
  • Push the onions to the side of the skillet. Add the seasoned chicken breasts, browning each side for about 4-5 minutes.
  • Stir in the rice, making sure to coat it in those delicious onion flavors.
  • Pour in the chicken broth, bringing it to a gentle boil.
  • Cover your skillet and reduce the heat to low. Let it simmer for about 20 minutes, or until the chicken is cooked through and the rice is fluffy.
  • Remove the lid and sprinkle the shredded cheese over the top. Cover for an additional 5 minutes until the cheese is melted and bubbly.
  • Remove from heat and let stand for a few minutes. Sprinkle fresh parsley on top for a burst of color and freshness before serving.

Notes

Feel free to swap spinach with kale for an extra nutritional boost or consider adding mushrooms for an earthy note. For variations, try brown rice or cauliflower rice for a healthier option, or add caramelized apples or Mediterranean flavors with sun-dried tomatoes or olives.
