Ingredients

Main Ingredients

  • 1 lb Steak Bites (sirloin or ribeye recommended) Opt for tenderness! If you’re looking for a healthy option, choose lean cuts.
  • 2 cups Tortellini (fresh or frozen) Cheese-filled tortellini adds a creamy element, but feel free to swap for spinach or meat-filled ones if you prefer.
  • 4 tbsp Cowboy Butter This compound butter with garlic, herbs, and spices elevates the flavor! You can make your own or buy it premade.
  • 2-3 cloves Garlic (minced) Fresh garlic adds an aromatic depth; feel free to use garlic powder in a pinch.
  • ½ cup Heavy Cream For that luscious texture. Swap Greek yogurt for a lighter twist, but be sure to mix in gently.
  • Salt and Pepper (to taste) Essential for bringing out the dish’s core flavors.
  • Fresh Parsley or Basil (for garnish) Adds a vibrant touch; don’t skip this!

Instructions

Preparation

  • Chop your steak into bite-sized pieces, mince the garlic, and gather all your ingredients.

Cooking

  • In a large pan over medium-high heat, add 2 tablespoons of the Cowboy Butter. Once melted, add your steak bites, seasoning them with salt and pepper. Sear until browned, about 3-4 minutes for medium-rare. Remove the steak from the pan and set aside.
  • In the same pan, add the remaining Cowboy Butter. A quick swirl should unleash its fragrant herbs. Add minced garlic and stir until fragrant, about 1 minute.
  • Add the tortellini to the pan and stir it into the garlic butter mix for about 2 minutes.
  • Pour in the heavy cream, stirring to bring everything together. Allow it to simmer gently for another 3-5 minutes.
  • Return the steak bites to the pan, mixing until everything is evenly coated. Garnish with fresh herbs before serving.

Notes

You can swap whole wheat tortellini for a healthier twist. For added color and nutrition, consider throwing in sautéed seasonal vegetables. If you like heat, add a pinch of red pepper flakes while sautéing the garlic.
