  • 4 pieces Chicken thighs or breasts Juicy and tender, soak up all the flavors.
  • 1/4 cup Honey Balances the tanginess of the BBQ sauce.
  • 1/2 cup BBQ sauce Your favorite brand will make this dish sing.
  • 1 cup Rice Serves as the base to absorb delicious sauce.
  • 1 medium Onion Sliced, adds flavor.
  • 1 medium Bell pepper Sliced, adds crunch.
  • 2 tablespoons Olive oil For browning the chicken.
  • to taste Salt and pepper Essential seasonings to enhance flavors.

Preparation

  • Heat olive oil in a large skillet over medium heat and add chicken pieces seasoned with salt and pepper. Sear until golden brown, about 5 minutes per side.
  • Remove the chicken and set it aside. In the same pan, add sliced onions and bell peppers, sautéing until they soften and begin to caramelize.
  • Stir in the rice, mixing it with the vegetables, and create a small well in the center.
  • Place the chicken back in the pan, and drizzle over the honey and BBQ sauce.
  • Pour in water, cover, and let it simmer, allowing the rice to cook fully while soaking up all those flavors, about 20-25 minutes.

Notes

For added heat, sprinkle red pepper flakes or chopped jalapeños. Leftovers can be stored in an airtight container in the fridge for up to three days.
