Preparation

  • In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  • In another bowl, combine the milk, egg, and melted butter and whisk until smooth.
  • Pour the wet ingredients into the dry ingredients. Mix gently until just combined—lumps are okay!

Cooking

  • Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.
  • Using a 1/4 cup measuring cup, pour batter onto the skillet. Cook for about 2-3 minutes until bubbles form and the edges look set.
  • Carefully flip the pancake and cook for an additional 1-2 minutes until golden brown.

Notes
