Preparation

  • In a large bowl, whisk together the flour, sugar, baking powder, and salt until combined.
  • In a separate bowl, beat the egg, then add milk, melted butter, and vanilla extract.
  • Create a well in the center of your dry ingredients and pour in the wet mixture. Gently stir until just combined; a few lumps are fine.

Cooking

  • Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or non-stick spray.
  • For each pancake, pour about 1/4 cup of batter onto the hot griddle. Cook until bubbles form on the surface, about 2-3 minutes.
  • Carefully flip the pancakes and cook for an additional 1-2 minutes or until golden brown.
  • Serve warm off the griddle with your favorite toppings, such as syrup, fresh fruit, or powdered sugar.

Notes
