Main Ingredients

  • 1 lb Tortellini Cheese, spinach, or meat-filled varieties can be used.
  • 1 lb Italian Sausage Hot or mild; ground turkey or chicken sausage can also be used.
  • 1 cup Bell Peppers, diced Any color can be used.
  • 1 cup Zucchini, diced Spinach or kale can be substituted.
  • 28 oz Crushed Tomatoes Diced tomatoes or marinara sauce can be used as alternatives.
  • 2 cups Mozzarella Cheese, shredded Provolone or vegan cheese can be substituted.
  • 2 tsp Italian Seasoning Adjust to taste.
  • 3 cloves Garlic, minced Can substitute with garlic powder if needed.

Cooking Process

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, sauté the Italian sausage, breaking it apart with a wooden spoon until browned and cooked through.
  • Add the diced bell peppers and zucchini, stirring them in with the sausage. Cook for another 3-4 minutes until softened.
  • Pour in the crushed tomatoes and Italian seasoning. Stir everything together and allow to simmer for about 5 minutes.
  • In a large mixing bowl, combine the tortellini with the sausage and vegetable mixture, tossing until coated.
  • Transfer the mixture to a greased 9x13-inch baking dish, spreading evenly.
  • Sprinkle the shredded mozzarella cheese on top.
  • Cover the dish with aluminum foil and bake for 20 minutes, then remove the foil and bake for an additional 5 minutes.
  • Let it cool for a few minutes before serving.

Notes

Feel free to add extra veggies, spice it up with red pepper flakes, incorporate ricotta cheese for creaminess, or use rotisserie chicken for a quicker option. Serve hot and pair with a garden salad and garlic bread.
