Instructions

Preparation

  • Heat Your Skillet: In a large, heavy skillet over medium heat, add a drizzle of olive oil. Let it heat up until shimmering.
  • Brown the Meat: Add the ground beef or turkey. Cook until browned, breaking it apart with a spatula for about 5-7 minutes.
  • Sauté the Veggies: Add the diced onions and bell peppers to the skillet. Sauté for another 5 minutes until soft and translucent.
  • Mix in the Spuds: Toss in the diced potatoes, diced tomatoes, and paprika. Season with salt and pepper, then cover the skillet.
  • Cook and Stir: Let it cook for 15-20 minutes, stirring occasionally, until the potatoes are tender. Splash in some water or broth if it gets too dry.
  • Finish with Fresh Herbs: Before serving, sprinkle fresh herbs over the skillet.
  • Serve Up the Love: Dish out and enjoy the hearty flavors.

Notes

Consider adding red pepper flakes for spice, corn or black beans for a southwestern twist, or cheese on top for added comfort.
