Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.
  • In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  • In another bowl, combine the brown sugar, oil, eggs, and vanilla extract until smooth.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Gently fold in the grated carrot, chopped apple, shredded coconut, and walnuts.
  • Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.

Baking

  • Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.

Notes
