  • 4 pieces Chicken Breasts, boneless, skinless You can use thighs or tofu for a vegetarian option.
  • 1 cup Barbecue Sauce Homemade or store-bought; opt for a lower-sugar version if desired.
  • 1 cup Cheddar Cheese, shredded Try pepper jack for an added kick.
  • 1 cup Bell Peppers, sliced A rainbow of colors makes it festive; use zucchini as a substitute.
  • 1 medium Onion, sliced Sweet onions add a nice sweetness but feel free to skip for a less caramelized flavor.
  • 2 tablespoons Olive Oil Butter works beautifully too.

Cooking

  • Heat the Olive Oil in a large skillet over medium-high heat.
  • Add the seasoned Chicken Breasts and cook for about 5-7 minutes on each side until golden brown and cooked through.
  • Remove the chicken from the skillet and set aside.
  • In the same pan, add the sliced Bell Peppers and Onion, sautéing until soft and slightly caramelized, about 4-5 minutes.
  • Return the chicken to the skillet and pour the Barbecue Sauce over it, stirring until the chicken is evenly coated.
  • Cover with a lid and sprinkle the shredded Cheese on top, letting it melt beautifully, about 2-3 minutes.
  • Serve hot and enjoy!

Notes

Consider adding fresh herbs like cilantro or parsley just before serving for a burst of freshness. You can also top with crispy bacon bits or a dollop of sour cream for extra luxury.
