  • 1 cup crushed crackers (like Ritz) Adds a delightful crunchy topping; you can also use breadcrumbs.
  • 1/2 cup milk Almond milk can be a good dairy-free substitute.
  • 1 teaspoon garlic powder Fresh garlic can enhance flavors even more.
  • Salt and pepper Essential for seasoning!

Preparation

  • Preheat the oven to 350°F (175°C).
  • If using rotisserie chicken, shred it into bite-sized pieces in a large bowl.
  • In the same bowl, add sour cream, cream of chicken soup, milk, and garlic powder. Stir until fully blended.
  • Gently fold the shredded chicken into the mixture and season with salt and pepper to taste.
  • Pour the mixture into a greased 9x13 inch baking dish.

Topping and Baking

  • Sprinkle the shredded cheddar cheese generously over the top.
  • Evenly distribute the crushed crackers over the cheese layer.
  • Bake for about 30 minutes, or until the top is golden brown and bubbly.

Notes

This casserole is fantastic served with a fresh garden salad or garlic bread. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days or frozen before baking for up to 3 months.
