  • 4 pieces Salmon fillets Fresh is best; look for those with bright, vibrant color.
  • 2 tablespoons Olive oil For richness and flavor.
  • 3 cloves Garlic Minced; fresh garlic adds depth to every bite.
  • 1 cup Cherry tomatoes Halved; they burst with sweetness when cooked.
  • 1/2 cup Kalamata olives Pitted and sliced; they bring that briny flavor characteristic of Mediterranean cuisine.
  • 1 teaspoon Oregano Dried or fresh will enhance the dish.
  • 1 piece Lemon Juiced; the acidity brightens and balances the flavors.
  • to taste Salt and Pepper To taste.
  • as needed garnish Fresh parsley For garnish; adds a nice pop of color and freshness.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Prepare a baking dish by drizzling 1 tablespoon of olive oil on the bottom, spreading it evenly.
  • Place the salmon fillets into the dish, skin-side down. Drizzle the remaining olive oil over top, then sprinkle with salt, pepper, and oregano.
  • Scatter the minced garlic, halved cherry tomatoes, and sliced olives around the salmon.
  • Squeeze the juice of one lemon over everything.

Cooking

  • Bake the salmon in the preheated oven for about 15-20 minutes or until the salmon is opaque and flakes easily with a fork.
  • Once baked, sprinkle with fresh parsley before serving.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F (175°C) for about 10 minutes.
