  • 1.5 pounds boneless skinless chicken breasts, cut into bite-size strips Use thighs for juicier results.

Instructions
 

Cooking Chicken

  • Season the chicken with salt, pepper, and half the oregano. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook until golden and just cooked through, about 4–5 minutes. Remove and keep warm.

Sautéing Vegetables

  • In the same skillet, add the remaining olive oil and sliced onion. Cook until it softens and begins to caramelize, about 3 minutes.
  • Add the bell peppers and sauté for 2–3 minutes until tender-crisp. Stir in the garlic and cook until fragrant, about 30 seconds.

Combining Ingredients

  • Return the chicken to the pan with cherry tomatoes, olives, and capers. Pour in the chicken broth or white wine to deglaze the pan, scraping up browned bits for rich flavor.
  • Stir in lemon zest, lemon juice, and the remaining oregano. Allow the sauce to reduce slightly, coating the chicken and veggies in a glossy, bright sauce.
  • Taste and adjust salt and pepper.
  • Finish with a sprinkle of fresh parsley and crumbled feta. Serve immediately over warm couscous, rice, or buttery mashed potatoes.

Notes

Make it vegetarian by replacing chicken with firm tofu or chickpeas. Add heat with red pepper flakes. Serve over cauliflower rice for low-carb options. Experiment with different herbs for varied flavors.
