Preparation

  • Pat the chicken breasts dry with paper towels and season both sides generously with salt and pepper.

Cooking

  • In a large skillet, heat the olive oil over medium-high heat until shimmering.
  • Carefully add the chicken breasts to the skillet. Cook for about 5-7 minutes on each side, until they are golden brown and cooked through.
  • Remove the chicken and set aside. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  • Add the cherry tomatoes, lemon juice, zest, oregano, and paprika to the skillet. Stir gently and bring to a simmer.
  • Return the chicken to the skillet, spooning the sauce over each piece. Allow it to simmer for another 5 minutes.
  • Remove from heat, garnish with freshly chopped parsley, and serve immediately.

Notes

Feel free to swap Greek yogurt for sour cream if you prefer a creamier sauce. Use any seasonal vegetables for added flavor. Store leftovers in an airtight container in the refrigerator for up to three days.
