  • 1 cup Tomato Puree Creates a tangy base.
  • 1 can Coconut Milk Adds creaminess and a subtle sweetness.
  • 1 teaspoon Cumin Part of the spice blend.
  • 1 teaspoon Paprika Part of the spice blend.
  • 1 teaspoon Turmeric Part of the spice blend.
  • 2 cups Fresh Spinach Wilts into the dish for color and nutrition.

Preparation

  • In a large skillet, heat the olive oil over medium heat.
  • Add the chopped onion and garlic, stirring until they’re translucent and fragrant.

Cooking

  • Sprinkle in the cumin, paprika, and turmeric, letting them toast for about a minute.
  • Toss in the canned chickpeas (drained and rinsed), stirring to coat them in the spice mixture.
  • Pour in the tomato puree and coconut milk, mixing well to combine. Bring to a gentle simmer.
  • Stir in the fresh spinach until wilted. Season with salt and pepper to taste.
  • Remove from heat and allow to cool slightly before serving.

Notes

Store leftovers in an airtight container in the fridge for up to three days. You can freeze portions for up to three months.
