  • Fresh basil leaves For garnish.
  • 12 ounces pasta of your choice Penne or fettuccine are personal favorites.

Preparation

  • Season the chicken breast with salt and pepper on both sides.
  • In a large skillet over medium heat, add the olive oil. Once hot, add the chicken and sear until golden brown, about 5-7 minutes per side.
  • Toss in the minced garlic and cook for an additional minute until fragrant.
  • Stir in the sun-dried tomatoes and chicken broth, allowing it to simmer for a couple of minutes.
  • Pour in the heavy cream and bring to a gentle simmer while scraping up any delicious bits from the bottom of the pan.
  • Add the Parmesan cheese and let it melt into the sauce, creating a creamy embrace.
  • Meanwhile, cook your pasta according to package instructions. Drain and toss the pasta into the skillet, ensuring it’s well coated with the sauce.
  • Top with fresh basil before serving.

Notes

Feel free to add spinach for a pop of color and extra nutrition. Swap the heavy cream for Greek yogurt for a healthier option. A dash of red pepper flakes can elevate the dish with a kick!
