Preparation

  • Preheat your skillet over medium heat. Add a little butter or oil for added flavor.
  • In a bowl, whisk the eggs with a splash of salt and pepper until well combined.
  • Once the skillet is hot, pour in the eggs. Scramble gently until cooked through but still soft (about 3-4 minutes). Remove from heat.
  • In a small bowl, combine the maple syrup and Dijon mustard to create your dressing.
  • Slice each croissant in half and lay them on a plate, ready for assembly.

Assembly

  • On the bottom half of each croissant, add a layer of the scrambled eggs.
  • If using, place a slice of cheese followed by your bacon or sausage.
  • Drizzle the maple mustard mixture generously over the top and then add the croissant top to finish.
  • Optionally, place the assembled sandwiches back in the skillet for a minute on each side to crisp up the edges, enhancing the flavor.
