  • 1 lb shrimp, peeled and deveined fresh or frozen, ensure they’re thawed
  • 1 tsp chili powder for a kick of heat
  • 1 tsp cumin earthy and warm
  • Salt and pepper to taste

Fresh Ingredients

  • 1 ripe mango, diced look for one that yields slightly when pressed
  • 1 bell pepper, sliced any color, bright hues add cheer
  • 1 small red onion, thinly sliced adds a zesty crunch
  • 2 cloves of garlic, minced for that aromatic base
  • Lime wedges, for serving the zest of lime brightens it all up

Cooking Ingredients

  • 1 tbsp olive oil or avocado oil for a lighter touch

Preparation

  • In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and let it sizzle for about 30 seconds until golden.
  • Toss in the shrimp along with chili powder, cumin, salt, and pepper. Cook for about 3-4 minutes, stirring occasionally until the shrimp turns pink and opaque. Remove the shrimp and set aside.
  • In the same skillet, add sliced bell pepper and red onion. Sauté for 5-7 minutes until they’re tender but still vibrant—just enough to retain that crispness!
  • Return the shrimp to the skillet, adding in the diced mango. Stir gently until everything is heated through and well combined, about 2 minutes.

Serving

  • Spoon the colorful mixture into bowls, garnishing with fresh cilantro and a squeeze of lime juice for that extra zest!

Notes

For variations, consider adding sliced avocado for creaminess or swapping mango for pineapple for a tangy flavor. To make it vegetarian, replace shrimp with grilled chicken or tofu.
