  • 1 tablespoon tomato paste Enhances the overall flavor, adding a subtle acidity.
  • 2 teaspoons dried thyme Earthy and fragrant, it elevates the dish.

  • 2 tablespoons flour (optional) If you'd like a thicker stew.
  • 1 tablespoon olive oil For browning the meat.

Preparation

  • In a large pot or Dutch oven, heat olive oil over medium-high heat. Season the beef with salt and pepper, then brown it on all sides.
  • Once browned, remove the beef and set it aside. In the same pot, add onions and garlic, stirring until fragrant and translucent.
  • Add the beef back to the pot along with the carrots, potatoes, tomato paste, dried thyme, and beef broth. Stir everything together.

Cooking

  • Bring the mixture to a gentle boil, then reduce the heat and let it simmer for 5 hours.
  • If you prefer a thicker stew, mix 2 tablespoons of flour with a little water to create a slurry, then stir it into the pot during the last hour of cooking.
  • Taste and adjust seasoning if necessary. Ladle the stew into bowls and serve hot.

Notes

Try rosemary or bay leaves for a different flavor profile. A splash of red wine adds an indulgent touch, perfect for holiday gatherings.
