Instructions

Preparation

  • Pat the chicken breasts dry, then pound them to an even thickness for even cooking.
  • Season both sides of the chicken breasts with salt and pepper.
  • Set up your breading station: In a shallow bowl, place the flour. In another bowl, whisk the eggs. In a third bowl, combine the Parmesan cheese, garlic powder, and Italian seasoning.

Breading and Cooking

  • Dredge each chicken breast in flour, shaking off the excess.
  • Dip the floured chicken into the egg, then coat it with the Parmesan mixture, pressing gently to ensure it sticks.
  • Heat a drizzle of olive oil in a large skillet over medium-high heat.
  • Add the breaded chicken breasts and cook for about 4-5 minutes on each side until golden brown and cooked through.

Sauce Preparation

  • Remove the cooked chicken from the skillet and set aside.
  • In the same skillet, reduce the heat and add the heavy cream, scraping any flavorful brown bits from the pan.
  • Allow the cream to thicken slightly, then return the chicken to the skillet, coating it with the creamy goodness. Simmer for an additional couple of minutes.
  • Garnish with fresh parsley before serving.

Notes

If you’re lucky enough to have leftovers, store them in an airtight container in the fridge for up to 3 days. Reheat gently on the stovetop with a splash of cream to revive that creamy texture. It can also be frozen, but it's recommended to separate the sauce and chicken for optimal texture upon reheating.
