  • 1 can Cream of Chicken Soup
  • 1 cup Shredded Cheddar Cheese Divided

  • 1/4 cup Green Onions Sliced
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder

Preparation

  • Preheat your oven to 375°F (190°C).
  • Prepare the potatoes: Wash them and cut into cubes. Boil them in a large pot of salted water for about 10 minutes until just tender.
  • Sauté the chicken: In a skillet, cook the diced chicken with a drizzle of olive oil until it’s no longer pink.
  • Mix the ingredients: In a large bowl, combine the cooked chicken, drained potatoes, cream of chicken soup, sour cream, half of the cheddar cheese, and spices. Stir until well blended.
  • Transfer to a baking dish: Spread the mixture evenly, then top with the remaining cheddar cheese and sliced green onions.
  • Bake: Place in the preheated oven for about 30 minutes, or until the cheese is bubbly and golden.

Notes

Feel free to mix in some frozen peas or corn for added texture. For a healthier alternative, consider using cauliflower instead of potatoes for a low-carb version without sacrificing flavor.
