  • 1/4 cup Fresh herbs Parsley, rosemary, or thyme—choose your favorites for a custom aroma.
  • 1/4 cup Olive oil For cooking and keeping the chicken moist.
  • Salt and pepper Essentials to enhance the flavors.

Method
 

Preparation
  1. In a bowl, whisk together the juice of one lemon, minced garlic, chopped fresh herbs, olive oil, salt, and pepper.
  2. Place the chicken breasts in a shallow dish or resealable bag. Pour the marinade over the chicken, ensuring each piece is well-coated. Let it sit for at least 15 minutes.
Cooking
  1. In a skillet, heat a tablespoon of olive oil over medium-high heat.
  2. Add the marinated chicken breasts to the skillet. Cook for about 6-7 minutes on each side until they’re golden brown and cooked through. Use a meat thermometer, aiming for 165°F for perfection.
  3. Once done, remove the chicken from the skillet and let it rest for a few minutes. Drizzle with any leftover marinade and garnish with more fresh herbs and lemon slices.

Notes

Store any uneaten chicken in an airtight container in the fridge for up to 3-4 days. For longer storage, place it in a freezer-safe container for up to 3 months. To reheat, simply place the chicken in a skillet over medium heat until warmed through, or microwave in short intervals.
