  • 1/4 cup olive oil for marinating the chicken
  • 2 pieces lemons zest and juice, freshly squeezed
  • 2 tablespoons fresh parsley, chopped or 1 tablespoon dried
  • 2 tablespoons fresh thyme, chopped or 1 tablespoon dried
  • 3 cloves garlic, minced
  • Salt to taste
  • Pepper to taste

Preparation

  • In a bowl, combine olive oil, lemon zest, lemon juice, parsley, thyme, garlic, salt, and pepper.
  • Place the chicken breasts into the mixture, ensuring they are well-coated.
  • Cover and let marinate for at least 15 minutes (or up to 2 hours in the fridge for extra flavor).

Cooking

  • Preheat your oven to 400°F (200°C) while the chicken marinates.
  • Heat a large oven-safe skillet over medium-high heat and add a drizzle of olive oil.
  • Carefully place the marinated chicken in the skillet and sear for about 5 minutes on each side until golden brown.
  • Transfer the skillet to the preheated oven and bake for 15–20 minutes until the chicken is cooked through (165°F or 74°C internal temperature).
  • Let the chicken rest for 5 minutes to allow the juices to redistribute before slicing.
  • Serve with a sprinkle of fresh herbs on top.

Notes

For a spicy kick, add red pepper flakes. You can also toss in grilled summer veggies for a vibrant dish. Top with a light lemon herb cream sauce made from Greek yogurt for an indulgent touch.
