  • 1 cup orzo pasta This rice-shaped pasta absorbs flavors beautifully.

  • 1 each lemon, zest and juice Brightens up the dish.
  • 2 tablespoons olive oil For sautéing and ensuring that amazing golden color.
  • to taste salt and pepper To taste.
  • to taste red pepper flakes Optional for a spicy kick.
  • 1 tablespoon fresh parsley, chopped For garnish and an extra pop of freshness.

Instructions
 

Cooking the Orzo

  • In a large pot of salted boiling water, cook the orzo pasta according to package instructions until al dente (about 8-10 minutes). Drain and set aside.

Sautéing the Shrimp

  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  • Toss the shrimp into the skillet, seasoning with salt, pepper, and red pepper flakes if you like some heat. Cook for about 3-4 minutes until the shrimp are pink and opaque.

Combining Ingredients

  • Stir in the cooked orzo, adding lemon zest and juice. Mix well, allowing the flavors to meld together, about 2-3 minutes.

Serving

  • Garnish with freshly chopped parsley, and serve warm.

Notes

Consider adding spinach, cherry tomatoes, or asparagus for extra nutrients and color. You can also substitute shrimp with chicken or tofu for a different twist.
