  • 1 whole whole chicken (about 4-5 lbs) Choose a fresh, organic chicken for the best flavor and tenderness.
  • 4 cloves cloves of garlic, minced Fresh garlic adds depth; you can also use garlic powder as a substitute if needed.
  • 2 lemons You’ll need both the juice and zest for a burst of freshness; use Meyer lemons for a sweeter touch.
  • 1/4 cup olive oil Opt for extra virgin olive oil for richness; avocado oil can be used as a healthier alternative.
  • Salt and pepper, to taste Essential for bringing out the flavors.
  • Fresh rosemary and thyme These herbs introduce an earthy aroma; you can also use dried herbs but fresh is better.
  • 1/2 cup Vegetable or chicken broth (optional) Use to baste the chicken for added moisture and flavor.

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a bowl, combine the minced garlic, lemon zest, lemon juice, olive oil, and a generous pinch of salt and pepper. Whisk the ingredients together.
  • Place the chicken in a roasting pan and rub the marinade generously over the chicken, including under the skin. Tuck sprigs of rosemary and thyme around the chicken.
  • Pour the vegetable or chicken broth into the bottom of the pan (optional).

Cooking

  • Roast the chicken in the preheated oven for about 45-50 minutes, or until the internal temperature reaches 165°F (75°C). Baste halfway through cooking.
  • Let the chicken rest for about 10 minutes before carving.

Notes

Feel free to experiment with herbs; tarragon or parsley can complement the flavors beautifully. Add root vegetables or potatoes around the chicken for a complete meal. For a different citrus twist, try oranges or grapefruits in place of lemons. Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months.
