Cooking Instructions

  • In a large pot, boil salted water and add the orzo. Cook for about 8-10 minutes or until al dente. Drain and set aside, keeping a little pasta water for later.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic, and when fragrant, add the shrimp. Season with salt and pepper and cook until shrimp are pink and opaque, about 3-5 minutes.
  • Once the shrimp is cooked, pour in the lemon juice and zest. Stir in the feta until it starts to melt, creating a creamy sauce.
  • Add the cooked orzo to the skillet. Toss everything together, adding a splash of the reserved pasta water if needed for extra creaminess.
  • Spoon the Lemon Feta Orzo Shrimp into bowls, sprinkle with fresh parsley or basil, and enjoy!

Notes

This recipe holds up well in the fridge. Store leftovers for up to 2 days. For a make-ahead option, cook components separately and combine before serving.
