  • 8 slices good-quality bread (sourdough or whole grain) adds structure and flavor
  • 1 cup fresh blueberries, washed and patted dry juicy, sweet-tart bursts
  • 6 ounces soft goat cheese or brie, room temperature creamy and slightly tangy
  • 1 cup grated sharp cheddar or gruyere for that irresistible melt and pull
  • 2 tablespoons honey or maple syrup enhances blueberry sweetness without overpowering
  • 2 tablespoons butter, softened for golden, crispy bread
  • 1 handful baby spinach or fresh basil leaves (optional) for bright herbal lift
  • 1 pinch flaky sea salt and fresh cracked black pepper to finish and highlight flavors

Instructions
 

Preparation

  • Spread softened butter on one side of each bread slice. Place four slices butter-side down on a cutting board.
  • Crumble or spread goat cheese evenly on the bread, then sprinkle grated cheddar or gruyere on top for melt.
  • Scatter blueberries over the cheese, then drizzle a little honey or maple syrup across. Add spinach or basil if desired. Season with sea salt and black pepper.
  • Top with the remaining bread slices, butter side up.

Cooking

  • Heat a skillet over medium-low heat until warm.
  • Place sandwiches in the skillet and cook low and slow for about 4 to 5 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is oozing.
  • Let sandwiches rest for 1 minute, then slice in half.

Notes

For added texture, slice into triangles for a finger food option. Optionally, add chopped toasted nuts or swap herbs for a healthier or dessert twist.
