  • 1 can (14 oz) diced tomatoes Fresh tomatoes can add brightness, especially in summer.
  • 1 packet taco seasoning Homemade seasoning can elevate flavors—just mix chili powder, cumin, and garlic powder.
  • 1 cup corn Frozen, fresh, or canned works well—just ensure it’s drained if using canned.

Crust and Toppings

  • 1 can (8 oz) crescent roll dough Biscuits can also work if you want a heartier crust.
  • 1 cup shredded cheddar cheese Try pepper jack for a spicy twist or a dairy-free alternative for dietary needs.
  • 1 cup sour cream Greek yogurt is a fantastic substitute for a healthier profile.

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a large skillet over medium heat, brown the ground beef until fully cooked.
  • Stir in the black beans, diced tomatoes, and taco seasoning. Cook for another 5 minutes until combined and heated.
  • Roll out the crescent dough in a greased baking dish to form a crust.
  • Spoon the beef mixture over the crescent dough.
  • Spread the sour cream over the beef mixture.
  • Sprinkle the corn on top, followed by shredded cheddar cheese.

Baking

  • Bake the casserole for 20-25 minutes, or until the crust is golden brown and the cheese is melted.
  • Let the casserole cool for 5 minutes before slicing.

Notes

For healthier options, consider swapping ground beef for turkey or adding vegetables. Casseroles are best served hot. To store, let cool completely in an airtight container for up to 3 days in the fridge or 3 months in the freezer.
